Disney Parks Recipe Bobotie

Adapted from “Kitchen Magic with Mickey” by Pam Brandon and the Disney Chefs.

Jessica and I first tried this wonderful recipe at Boma - Flavors of Africa in Disney's Animal Kingdom Lodge a few years ago, and it was one of the main reasons we bought our first Disney Parks cookbooks! You can also find it at Tusker House in Disney's Animal Kingdom! This recipe is featured in “Kitchen Magic with Mickey by Pam Brandon and the Disney Chefs”, which is one of our favorite go-to cookbooks! Unfortunately this book is no longer in print, but if you find a second hand copy, I definitely recommend grabbing it.

Bobotie is from South Africa and it's part meatloaf, part casserole, with notes of sweet and savory. Jessica and I make this at least once a month! I really hope you try to make this at home and let me know what you think!

INGREDIENTS

  • 2 tablespoons corn or vegetable oil 

  • 1/2 cup diced onion

  • 1 teaspoon ground cinnamon 

  • 1/2 teaspoon curry powder 

  • 2 tablespoons rice vinegar 

  • 2 pounds ground beef or lamb

  • 3 slices white bread, torn into small pieces

  • 1 1/2 cups heavy cream (divided)

  • 1/4 cup sugar

  • 1/4 cup raisins

  • 1/4 cup golden raisins

  • 1/4 cup almonds

  • Course salt and freshly ground pepper, to taste 

  • 4 eggs

  • 1/2 cup whole or 2% milk

DIRECTIONS 

1. Heat oil in a large cast iron dutch oven, skillet or other large sauté pan over medium-high heat. Add onions and sauté until slightly caramelized, about 5 minutes. Reduce heat to medium and add cinnamon and curry powder. Stir to coat onions.

2. While onions are cooking, preheat the oven to 325℉.

3. Add vinegar and scrape the bottom of the pan to release the browned bits. Add beef or lamb and cook, breaking apart, until browned. Tip the pan forward and remove most of the grease, leaving about 1 tablespoon.

4. Add bread and 1 cup of heavy cream, stirring to combine.

5. Add sugar, stir to incorporate. If the mixture is too dry, add back a small amount of the spooned away grease. 

6. Stir in almonds and raisins, then season to taste with salt and pepper. Remove from heat. 

7. Transfer meat mixture to a 9x9 baking dish. Even mixture out and press into corners.

8. Whisk together eggs, remaining 1/2 cup heavy cream, and milk in a large bowl and pour over meat mixture.

9. Bake 40-45 minutes until golden brown. 

10. Sip on wine and enjoy your hard work!
