Peanut Butter Cookies
Who doesn’t love a chewy, delicious peanut butter cookie??
This recipe is a simple, easy to follow one that is sure to be a crowd pleaser whether you are making these for a family function, office party or a kiddos play date. Or maybe you’re making them just to treat yo’ self and to that we raise a glass of milk to you! (which incidentally goes perfectly with these cookies!)
INGREDIENTS
1 1/3 cup all purpose flour, scoop and level to measure
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
3/4 cup creamy peanut butter
1 large egg
1 1/2 tsp vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F. Line two 18 x 13 inch baking sheets with silicone baking liners or parchment paper.
In a medium bowl whisk together flour, baking soda, baking powder and salt. Set aside.
In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter, granulated sugar and brown sugar until combined.
Mix in peanut butter then blend in egg and vanilla. With the mixer set on low speed slowly add in flour mixture and mix until just combined.
Scoop dough out and shape into balls (2 tbsp or 30g) then place on baking sheets 2 inches apart. Using a fork flatten cookies slightly, then turn fork and flatten again creating a criss cross pattern.
Bake cookies one sheet at a time for about 9 minutes. Cool on sheet for 5 minutes before transferring to rack to cool completely. Enjoy!
NOTE
Cookies may appear pale and slightly under-baked but they will continue to cook slightly as they cool.
