Slow Cooker Chicken Wild Rice Soup

This recipe is a favourite in the Braun household not only because it’s a simple slow cooker recipe but because it’s a simple slow cooker recipe that tastes GREAT! This is a great recipe to make if you’re looking for a cozy dish for a chilly evening, are craving something hearty and filling or are looking for creative ways to use up leftover chicken!

INGREDIENTS

  • 1 cup wild rice

  • 1/4 cup olive oil

  • 1 onion, chopped

  • 2 medium carrots, peeled and chopped

  • 2 large stalks celery, chopped

  • 1 tsp dried thyme

  • 1/2 cup all purpose flour

  • 8 cups vegetable or chicken stock

  • 1/2 stick (4 tbsp) butter

  • 2 cups cooked chicken, cubed

  • 1 cup milk or half and half

  • 1/2 cup chopped parsley

  • salt and pepper

DIRECTIONS

  1. Place onion, carrots, celery, chicken, wild rice (uncooked) and dried thyme in slow cooker.

  2. Pour in vegetable or chicken stock. Cover and cook for 6 hours on high or 8 hours on low.

  3. 45 minutes before it's done, pour in the milk or half and half. Mix and cover.

  4. Melt butter in a small saucepan. Add flour and stir constantly for 2 minutes. Then, add 1 cup water and stir.

  5. Immediately add mixture to soup.

  6. Add salt and pepper to taste and mix. If mixture seems too thick, add water or additional stock.

  7. Cover and allow to finish cooking.

  8. Stir in chopped parsley just before serving. Enjoy with a warm dinner bun on the side!

NOTE

You may want to add additional salt and pepper or a favourite spice to kick up the flavour a bit! Using seasoned chicken can also help add deeper levels of flavour to this dish!
