Homemade Thin Mints

This holiday cookie recipe is by far our most requested recipe ever! These sweet treats are so quick and easy and they are always a huge crowd pleaser! These are GREAT as is, and also taste delicious frozen! (Plus they last longer frozen!)

INGREDIENTS

  • 1 box dark chocolate candy coating (for melting)

  • 10-12 drops of peppermint oil (more if using peppermint extract)

  • Ritz crackers

DIRECTIONS

  1. Lay out wax paper on countertop to allow the cookies to harden.

  2. Melt chocolate according to package directions. **Be careful** not to over-heat, as the chocolate will start to re-harden and won’t melt again. (Approx. 30 seconds at a time, stirring in between, and then less time as the chocolate gets closer to being completely melted.)

  3. Mix in drops of peppermint oil/extract and taste as you go. (You can always add more but you can’t remove!)

  4. Dip ritz crackers into the minty melted chocolate. Using a fork, scoop the cookie out, tapping on the bowl to remove excess chocolate.

  5. Lay them out on the wax paper to harden. Feel free to add sprinkles before they dry if you’d like!

  6. Enjoy!
