Molasses Spice Cookies

This recipe is a family favourite from The Murphy household and it’s enjoyed year after year! They’re easy to make and sure to satisfy any holiday crowd!

INGREDIENTS

  • 1 cup sugar

  • 3/4 cup shortening

  • 1/4 cup molasses

  • 1 large egg, beaten

  • 2 cups all purpose flour

  • 2 tsp baking soda

  • 1 tsp ground cinnamon

  • 1 tsp ground cloves

  • 1 tsp ground ginger

  • 1/4 tsp dry mustard

  • 1/4 tsp salt

  • 1/2 cup brown sugar and granulated sugar

DIRECTIONS

  1. Preheat oven to 375 degrees Farenheit. Grease or line cookie sheets and set aside.

  2. Beat sugar and shortening for about 5 minutes in a large bowl until light and fluffy. Add molasses and egg; beat until fluffy.

  3. Combine flour, baking soda, cinnamon, cloves, ginger, mustard and salt in medium bowl. Add to shortening mixture and mix until just combined.

  4. Place brown and granulated sugar mixture in shallow dish. Roll tablespoonfuls of dough into 1 inch balls and roll in sugar to coat.

  5. Place two inches apart on prepared cookie sheets. Bake 15 minutes or until lightly browned.

  6. Let cookies stand on cookie sheets 2 minutes before removing to wire racks to cool completely.

  7. Enjoy!

  8. Makes 6 dozen cookies.

NOTES

  • The spices in these cookies go great with a medium or dark roast coffee of your choice. We'd suggest staying away from anything too acidic. Latin American roasts are a great choice here!
